Age group(s) for this recipe:Preschool and YoungerElementary SchoolMiddle SchoolHigh School & BeyondEstimated time:Preparation takes approximately 1/2 hour, cooks in 60 to 70 minutes, 10 minutes to cool Number of servings:Makes 1 loafIngredients:1 1/2 cups of mashed bananas (approximately 3 large)3/4 cup sugar3/4 cup vegetable oil3 eggs2 cups all-purpose flour1 teaspoon of baking soda1/2 teaspoon baking powder1/2 teaspoon salt2 teaspoons vanilla Directions:Heat the oven to 325°.Grease a 9 x 5 x 3 loaf pan with shortening, using a pastry brush.Mix sugar, bananas, oil, and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients. Pour into pan.Bake until a wooden pick inserted into the center of the bread comes out clean.Let cool for 10 minutes, loosen sides of loaf from the pan with a knife and remove from pan.Let cool completely before slicing. Other suggestions and comments:Use a potato masher to mash up the bananas, kids love to do this.
