Grading writing can be long and overwhelming. What tips do you have to make writing easier to grade?

Grading writing is a difficult and time-consuming exercise. If it is a matter of grading an essay on an exam, then things seem a little easier. The best advice I have received from a professor I assisted a few years ago was to outline what an C (average) essay would be. By outlining the essay in advance, the expectations of what an average essay would be clear-cut. Should a student write an essay that includes more information than the average essay includes, the student receives a higher grade proportional to the average essay. What counts as earning more points is debatable, but that could be worked out in advance with the professor.
One thing I have not encountered in a class is free-writing assignments. By free-writing assignments, I mean those assignments the students can choose their own topic. How does one go about grading these assignments? Particularly, those types of assignments associated with culture and critical theory?

Thanks for your comments! I like what you said about grading freewriting. I agree that it's a sticky topic. Most people give points for merely doing the freewriting project, but if that doesn't work in this situation, then the students need to be told the criteria (whatever you choose the criteria to be). Although, that might take away the "free" part of the "freewriting" project. Tough! How does one grade creativity anyway?
