I was thinking along those lines and found a pretty cool little wireless camera that fits this purpose.
It is lightweight and unobtrusive and has yielded some interesting results!

I managed to find a micro video camera, measuring just 2cm x 2cm, with a long range transmitter that has a range of 400m! The pictures you get are unbelievable. I got it online at www.flyonthewall.uk.com

You might want to consider a portable system which can be connected to the RC device with a LCD screen to view the camera. The Camera runs on a standard Battery for around 5-8 hours, you can also connect the receiver to a PC or VCR for recording. Have a look at;
